The grass-green, somewhat fleshy leaves are ovate or broadly elliptical. The overwintering shoots of watercress taste sharp and bitter and are great with salads, herb sauces, cottage cheese dishes or vegetables. Watercress also stimulates the appetite, promotes the metabolism, and is diuretic. Likewise it is recommended in Naturopathy for the purification of the liver, lungs and stomach.
