Description

Blue or gray Capuchin peas are a traditional East Frisian specialty. They also belong to Dutch heritage as 'Capucijners', the traditional hearty, rustic cuisine. The plants are similar in appearance, stature and culture to shelling peas, but with their purple flowers and dark blue-purple, 8-10 cm long pods, they are a rarity. The peas taste pleasantly sweet when freshly shelled, but quickly become starchy if left too long. If dried, they have a long shelf life. The tasty peas are cooked for soups and as an accompaniment to meat.
