Thompson & Morgan Aubergine 'Prosperosa'

These eggplants grow in a manner similar to peppers, they grow many round, violet fruits with firm flesh and a mild flavor. They are great for growing in a greenhouse but also grow well outdoors in a sunny area. They can be harvested over the summer.

Recipe: Italian Eggplant

1. Chop onions, aubergines and peppers into cubes and fry in butter.
2. Add tomatoes and oregano and let simmer.
3. Sprinkle with parmesan cheese. Delicious!
